Honey and walnut muffins

Honey and walnut muffins are a fun tasty treat. A little imagination makes for a deliciously fun final course.


Or why not enjoy one as a balanced snack? The walnuts and the honey, combined with the homemade mix, make these muffins a healthy, wholesome treat.

Ingredients

180 g plain flour · 1/2 tsp cinnamon · 1/2 tsp ginger · 1 sachet of baking powder · 50 g walnuts · grated orange zest · 80 g sugar · 70 g butter · 2 eggs · 2 tbsp honey

Preparation

In one bowl combine the flour, baking powder and spices. In another bowl mix the softened cubed butter with the sugar.
Add the honey and the eggs and mix into a cream, add the flour and the spices, the chopped nuts and the grated orange zest.
Mix rapidly with a spoon to create a smooth mixture.
Butter and flour your muffin moulds and fill each mould up to 2/3 full.

Baking

Preheat the oven to 180° and bake the honey and walnut muffins for around 15 minutes.
Remove from the oven and leave to cool then decorate each muffin with a walnut (use a little honey to attach the nuts) and serve.
